We conditioned our American wild ale in apple, peach, grape, and cherry Brandy barrels for over a year. They were then bottle and keg conditioned until they were carbonated to just the right levels. While the beer itself was the same brew, the barrel provided a distinct flavor to each one, making the barrel an ingredient itself.
